Anyone have a recipe for it? I always have it for dessert when I go to a Mexican restaurant.

This came up in a yahoo search..... I can't wait to try it! I love this desert!


MEXICAN FRIED ICE CREAM

3 c. vanilla or chocolate ice cream
2 beaten eggs
1/2 tsp. vanilla
4 1/2 c. sweetened corn flakes or (rice crisp cereal, crushed)
1 tsp. ground cinnamon
Cooking oil for deep fat frying
Ice cream topping

Place six scoops about 1/2 cup each of ice cream in a small pan (freeze for 1 hour). Combine eggs, vanilla in a small mixing bowl. In pie plate combine cereal and cinnamon.
Dip each frozen ice cream ball in egg mixture. Then in cereal mixture. Return coated ice cream balls to pan and freeze (1 hour) or until firm. Reserve remaining cereal mixture. Cover and chill remaining egg mixture. Remove coated ice cream ball from freezer. Dip ball in remaining egg and cereal mixture, return to pan. Cover and freeze for several hours.

Fry frozen ice cream balls (1 or 2 at a time) in deep hot oil at 350 degrees in deep frying pan or deep fryer, 15 seconds or until brown (golden brown). Drain a few seconds, return ice cream balls to freezer while frying remaining ones. Serve immediately with ice cream topping.

(Serves 6 persons.)

Oh, man! That's it!

I found this one, too. Do you think it will come out just as good?

Deep-Fried Ice Cream

Ingredients


1 quart vanilla ice cream
2 cups corn flake crumbs
2 Tbsp. cinnamon
2 cups brown sugar
3 cups vegetable oil
Honey
Whipping cream
Cherries





Directions

1. Mix cinnamon and brown sugar together and place in bowl.

2. Place corn flake crumbs in separate bowl.

3. Heat vegetable oil in saucepan to about 325° or the oil "crackles" when a dash of water is added to it.

4. Form ice cream into three-inch balls. Add balls first to brown sugar/cinnamon mixture, coating well, then to corn flake crumb mixture again coating well.

5. Drop ice cream into heated oil for about five seconds.

6. Quickly put deep-fried ice cream in a glass and top with honey, whipping cream, and cherries.

Caution - hot oil is being used. Always be careful when cooking with hot oil.

wonder what kind of oil to use? This stuff really is good. My hubby loves it!

I asked one of the cooks at a local mexican restaurant what kind of oil they used to deep fry their mexican ice cream. She told me that they always use peanut oil.

I combined the two recipes and it tasted great! Just like you get in the restaurants! My hubby was impressed(that's hard to do.

I formed 3-4 inch ice cream balls inside wax paper and then froze them for about an hour. I then took 2 eggs and 1/2 tsp of vanilla(beat well) and dipped the ice cream in that and then rolled around in cornflake mixture(I used frosted flakes(4cups)and about a tablespoon or so of cinnamon). I froze them again for about an hour and then repeated the dipping process until it was well coated. I let them stand in the freezer for about 4 hours. I used a sausepan of veggie oil(heated until water crackels when dropped in). I used tongs to pick up the ice cream and dip them in the hot oil. I let them stay in for about 10 seconds. I put them back in the freezer for a few minutes while I got the toppings ready. We drizzled ours with honey and whip cream. We also put chocolate magic shell on one of them. They were great!!!

Breyers' makes a Fried Ice Cream.I tried it. Only 4 weight watcher
points in a half cup. I would much rather eat the fried ice cream that is served in mexican restaurants.
