It is getting hot and I hate to heat up my kitchen so I thought yall might have some summer dinner ideas.

I know all the crock pot dinner ideas but what are some other favorites.

I don't know if this will keep your kitchen completely cool but I threw frozen boneless chicken breasts in the crockpot the other day with a half a jar of salsa. Then I made chicken and cheese quesadeas (sp?) and everybody really enjoyed it. Something different. Served with sour cream and the leftover salsa for dippin' and a side of mexican rice.

My family regularly has family night where we eat finger foods in front of the TV and watch a movie or eat while we play board games. A typical menu:

cheese slices or cubes
fresh fruit (usually grapes and apple slices)
crackers
deli meat slices
raw veggies and dip (usually includes carrots, broccoli, cherry tomatoes, and cauliflower, as those are favorites of each of us)

For dessert we may have frozen yogurt or cookies

Some salads as main dishes might be nice.

Chef Salad using your family's favorits veggies, meats, and cheeses

Seafood salad using fake crab, popcorn shrimp that the store steams for you, mayo, shredded cheese, and diced veggies. Serve on greens with crackers.

Artichoke salad using pasta, ham, tomatoes, shredded cheese, and bottled Italian Dressing. Serve on greens with crackers.

Stuffed tomatoes, using tuna salad, chicken salad, or cottage cheese

Open-faced sandwiches toasted in the toaster oven: bread, mayo and/or mustard, ham, tomato slice, and cheese--then toast

When you do cook a big meal, make enough for left-overs to pop in the microwave instead of heating the kitchen for at least one more meal.

Kabobs of veggies and meat on the grill. Serve with potatoes or corn on the cob, also cooked on the grill.

Lots of salads, frest fruits, and dairy and/or deli!

zucchini parmesan...I am in process of making it now. I am using lasagna noodles with sauce, ricotta, mozarella, sliced zucchini browned in bread crumbs and I will bake it. It is the same as eggplant parm but using squash sliced the long way.... YUM

I found this online. I had never heard of it but apparently the idea has been around a long time. It's called "cooler corn."

To fix corn on the cob for a large group, take a clean igloo ice chest. Place a dozen ears of corn in the bottom and cover with 2-1/2 quarts boiling water (or enough to cover corn). Close and do not peak for 30 minutes. Some recipes said to close for 2-1/2 hours. Since I have not tried it, I am not sure if the 30 minutes is enough.

The corn will stay hot for a long time. Now just find a main dish you can cook without heating up your kitchen.

Juanita--30 minutes is fine. You can leave it in longer, but the corn eventually gets a mushy, watery taste/texture. We used to do this in a canning pot for family gatherings. The coolers were all icing down drinks or keeping weird jello dishes from melting!
